I’m going to be honest, this was inspired by the Disney movie Ratatouille. I even have it on my phone. As it turns out, Ratatouille is a great movie and a very colorful dish.



  • 3 zucchinis
  • 3 yellow zucchinis
  • 4 or 5 vine tomatoes
  • 5 cloves of garlic, chopped
  • 1 medium onion
  • olive oil
  • 1 tbsp tomato paste
  • 1 orange heirloom tomato
  • 1 japanese eggplant


  1. heat olive oil in a pan for 2 minutes
  2. sautee the onion for 2 minutes
  3. add half of the garlic
  4. put tomato paste in the dish that will go in the oven, add the mushrooms
  5. slice all other veggies and layer in a circle alternating by color
  6. drizzle olive oil over the top and add remaining garlic
  7. season generously with salt and pepper
  8. cover and bake at 400 for 40 minutes to an hour or until it starts to brown
  9. garnish with parmesan cheese if you like
