Vegan Tomato Salad

The easiest part by far of last night’s experiments was the salad, but even that wasn’t easy. I had to learn how to deal with avocados. It was a little tricky.

Recipe: 

Ingredients: 

  • 1 avocado, diced into bite-sized pieces
  • 5 medium sized tomatoes, cut into bite-sized pieces
  • 1 medium cucumber in bite-sized pieces
  • cilantro, to taste
  • 1 tbsp + 2 tbsp lime juice
  • 1 tbsp olive oil
  • 1/4 tsp spike seasoning

Steps: 

  1. add the diced avocado to your serving bowl, then add 1 tbsp lime juice
  2. season generously with salt
  3. add the tomatoes, cucumbers, and cilantro and toss
  4. in separate bowl, whisk together 2 tbsp lime juice, olive oil, and seasoning for dressing
  5. pour dressing over the salad and serve quickly – does not keep well
