Berry Crumble Bars

In need of a yummy snack for a fun summer picnic? This was my choice. I wasn’t really sure how it would turn out, but I ended up really liking the final product. The picture above is just as it came out of the oven, but the final products were small squares of fruity, pastry, goodness.



  • 1 cup granulated sugar
  • 1 tsp baking powder
  • 3 cups all purpose flour
  • 1 cup cold unsalted butter
  • 1 egg
  • 1/4 tsp salt
  • juice of 1 lemon
  • 1/2 cup granulated sugar
  • 4 tsp cornstarch
  • 4 cups fresh berries
  • preheat oven to 375 degrees and grease 9×13 pan
  • in a large mixing bowl, whisk together sugar, flower, and baking powder; add salt
  • add butter and egg, and mix
  • use your hands to press this into a dough
  • set half of dough aside, and coat bottom of pan with the remaining half
  • in another bowl, combine lemon juice, sugar, and cornstarch
  • gently mix in the berries.
  • sprinkle berry mixture evenly in the pan
  • spread remaining crust over the top of the berry mixture
  • bake for 45 minutes, or until top is slightly brown
  • cool completely before serving in small squares
Hint: Use whatever berries you like, but be warned that strawberries contain a lot of water and can make the crust soggy.
